GF CHOCOLATE CHIP COOKIES

I’m not going to lie, i’m a cookie snob. Theres something just so comforting about a good chocolate chip cookie, but its hard to find stock bought cookies that are gluten free, refined sugar free and vegan all at the same time.

In the time that its taken you to scour the internet for a good ‘free from everything’ cookie brand that doesn’t cost £5 a cookie you could totally have made a dozen of your own!

My mission for the perfect cookie is far from over, but these are pretty damn close, and the are so clean they are almost good for you. Winner!

RECIPIE

  • 2 cup gluten free oats 

  • 1/2 cup spelt flour 

  • 1/4 cup coconut sugar 

  • 2 tsp cinnamon 

  • 1/4 tsp baking powder 

  • 1/4 cup melted coconut oil

  • 2 flax eggs     

  • 2 tbsp date syrup (coconut nectar would be fine too)

  • 2 tsp vanilla extract

  • 1/4 cup oat milk (or another but milk) 

  • 1 cup sugar free dark chocolate/carob chips 

 

Make the flax eggs. 1 flax egg = 1 tbsp flax + 2.5 tbsp water day to rest for 5 minutes. For two eggs just double the amount.

Melt the coconut oil.

Combine all the dry ingredients first then and add the wet including the flax egg & oil.

Cut up the chocolate or carob in small chunks & stir in. Go wild, make them as chocolatey as you wish!

Scoop out in balls - this mixture makes roughly 12 depending on the size you want to make them.

 Lay out on baking sheets & press them down gently to make a disc.

 And BAKE. On 180 degrees for 15 minutes or until brown.

 Leave to cool…or not because they are so yummy hot!

 

** The above are base measurements. Tweak based on your cookie preference. If you want them softer and less crumble add more coconut oil, syrup - or add in a spoonful of nut butter. More sugary add more sugar or syrup!
